Thumbs up Garlic & Lemon Pepper Super-Crunchie Crumbed Fish.

This is a great way to end a big days fishing.

These amounts should do about 1KG fish fillets.

First the super-crunchie Crumbs - Grab a coffee mug and fill with cornflakes, crush em up with the butt of some sort of kithen utensil. Keep doing this untill you have 2 cups of super-crunchie crumbs. Mix this up with 2 cups of standard bread crumbs (50/50), Now add 1 tbsp of Lemon Pepper and 1 tbsp of Garlic Granules along with a bit of Salt & Pepper. Done!!!

In a bowl whisk up 3 eggs along with a dash of milk, S&P if you like.

Now crank your electic fry pan up to a good 3/4 heat with about 10mm of oil in the bottom.

Grab your boneless fish fillets (any nice white fleshed fish will do, Mackerel, Bream, Reefies, whatever). Cut these into finger food sized pieces. Now dip fish into egg, then the crumbs and back into the egg, then back into the crumbs again, (double crumbed). Put the fish straight into the fry pan as you go. Cook for 2 minutes MAX each side. Once done place in the oven on paper towel until all the fish is cooked.

In a bowl mix a medium jar of mayonaise with a few squirts of tomato sause and a tea spoon of sugar. (The best seafood mayo!!!) Place in the middle of a serving tray and surround with the fish. Garnish with a few wedges of lemons/limes.

You'll Never cook enough!!!
