Freshwater fishing holiday

I am thinking about a freshwater fishing holiday somewhere awesome - maybe Lake Aswan for nile perch, or up the Amazon for peacock bass, or Bolivia for dorado.

I read an article about a salmon-like fish in Mongoliak, I think it is called a taiman.

Anyone got any other ideas for a world class freshwater fishing holiday? I would like to hear from people who have actually done such a trip.
